Live cooking shows in supermarkets throughout the New Jersey area have also been introducing the product to excited audiences, both those that follow a strictly kosher diet as well as those that don't necessarily but find it to be an excellent product.
Kosher Parmigiano Reggiano is produced by the Bertinelli farm (www.bertinelli.it), located in the cheese's certified production area in the areas surrounding Parma, Italy. This PDO (Protected Designation of Origin) Parmigiano Reggiano conforms to kashrut, the Jewish law on food based on the interpretation of the Torah. Bertinelli PDO Parmigiano Reggiano received kosher certification from by OK Kosher Certification.
The first wheel of Bertinelli's Kosher Parmigiano Reggiano was opened in October 2015, at EXPO, the world's fair based in Milan, Italy, at the Israel Pavilion. All the phases of the production process of the cheese, starting from the breeding of the cows to the ageing of the cheese in the dairy farm, take place under strict Rabbinic supervision while still maintaining all traditional aspects of the cheese while all the plants and technical structures have been sanitized to match the kashrut.

The feeding of cattle complies with the norms of a strict specification that bans the use of silage and fermented feeds. Parmigiano Reggiano is aged a minimum of 12 months while most Parmigiano Reggiano available in the US is aged a minimum of 24-36 months. No additives or preservatives are ever used as part of the strict production guidelines nor are they needed due to the humidity controlled aging techniques and long ageing times, resulting in a naturally lactose free cheese.
