Chef Derek’s new leadership role follows years of culinary study and experience and nearly 10 years working with the Marriott brand. The team at Vidalias Restaurant, our own popular Southwestern restaurant, is excited to welcome Chef Derek and his unique culinary vision to our hidden gem.

Chef Derek began his career in food at a small family owned restaurant in Panora, IA where he grew up. He worked there through high school and college and graduated from Iowa State University with a bachelor’s degree in business management. Wanting to pursue his passion and his career in culinary, he decided to attend Johnson and Wales in Denver, CO.
Beginning his Marriott career nearly 10 years ago as culinary intern at Renaissance Schaumburg hotel, Chef Derek later transferred to Coralville, moving his way up to the position of Sous Chef over the course of seven years. In April of 2014, he graciously accepted the Sous Chef position at Dallas/Plano Marriott at Legacy, where he continued his passion for creating signature dishes sourced from local ingredients.
Originally from Dubuque, Iowa, Chef Derek maintains a strong belief in growth, both personally and professionally. He strives to offer an unforgettable culinary experience based on fresh ingredients and innovative flavors. When not at work, he enjoys spending time with his wife and three kids, watching football and listening to country music.
